The name Caballero is synonymous with delicious, high quality coffee from Honduras.
Marysabel Caballero and her husband, Moises Herrera, are 2nd and 3rd generation coffee farmers. Marysabel's father, Don Fabio Caballero inherited large amounts of land around the town of Marcala. After a few lean years he passed the farm on to his children. Altogether they have about 200 hectares that is separated into 17 farms.
All these farms take their coffee cherries to the central wet mill where all the processing takes place. Each farm's production is usually kept separate unless the quantities are too small and they then combine lots.
This Catuai lot, which is the main varietal they farm, has undergone a washed process. We loved this coffee as soon as we tried it. The raspberry flavours come straight through but are perfectly married with chocolate and hazelnut flavours. An all round banger of a coffee one might say!
