This coffee comes from farms around the hilltop of Cerro Conjuro in the highlands, not far from the city of Jaen in northern Peru.
Over sixty local coffee farmers contribute Caturra variety coffee cherries for this coffee. Each of these sixty farmers have very small farms, being only about two to three hectares each. However, the farmers who contribute cherries to this coffee are the most experienced in the region, which means the quality of this coffee is exceptionally high.
We have roasted this coffee a little lighter than our espresso blend but a little darker than most of our other coffees. This brings out notes of darker fruit and chocolate. We have also kept the end of the roast fast to still keep the delicious citrus acidity shine through. All this is supported by a very moreish caramel like sweetness.
