Perched at around 1700 meters above sea level in the foot hills of Mount Kenya is the Ndimi factory. This is one of the washing stations that is run by the Inoi farmers Co-operative. The local farmers bring their ripe coffee cherries here to be processed.
The farmers in this area enjoy farming on mineral-rich, red volcanic soils that are perfect for growing coffee. These soils are known to be some of the most fertile soils in Kenya and when combined with the high altitudes gives the perfect recipe for some outstanding coffees.
Once the coffee cherries reach the factory the under-ripes and insect damaged cherries are sorted out. Then the cherries are pulped to remove most of the fruit before being fermented overnight. The cherries are then washed and dried for 10 to 20 days.
This coffee hits you around the taste buds with sticks of rhubarb and joyous lumps of toffee. Once you've enjoyed that, a beautiful citrus note shines through at the end of the mouthful, that reminds us of glorious summer lemons.
