This incredible coffee comes from the highland around the village of Shantawene in the Sidama region of Ethiopia. This area is an idyllic landscape of ancient trees, cool mountain air, and rivers that flow down from the surrounding hills.
The nearby waterfall called Gatta gives its name to this washing station that was founded under the forest canopy in 2017, after the first coffee trees were planted there sin 2013. The surrounding forest has been preserved providing perfect shade coverage for the coffee trees and drying tables allowing the coffee to mature slowly and develop depth and complexity.
This coffee marries the best parts of a typical washed and a typical natural Ethiopian coffee. The slightly lactic yoghurt flavour that we love about naturals is combined with the delightful apricot and floral nature of a washed coffee. When they come together like this it is a marriage made in heaven and a coffee made to delight!
