The Carmen estate is located in the Volcan valley in the East of Panama near the border with Costa Rica. They have been producing high quality coffee for over 50 years with the farm now in the hands of the third generation of the family.
The coffee trees grow on steep hillsides under the shade of old rainforest vegetation, with natural springs crossing through the farm giving stunning vistas. The farm produces just shy of 100 tonnes of coffee a year of different varietals and processing methods. They are dedicated to sustainable farming practices, even recycling waste from the coffee milling to re-use it as organic fertiliser.
For this natural Caturra lot the cherries, after picking, were laid out on raised beds to dry. They are then stored for 60 days to rest in jute bags before being analysed and sorted for quality.
Juicy strawberry and luscious peach flavours can be found in this beautifully sweet coffee. There is a mild but mesmerising acidity that lingers on the palate, as a toffee- like sweetness rolls in at the end.
